Herbed, Roasted Potatoes

Fresh-from-the-garden, easy recipe which uses potatoes and fresh herbs for a flavorful side dish!

Servings: 4
  • 4-5 Medium Potatoes
  • 2 Medium Carrots
  • 1/4 Cup Chives
  • 1/4 Cup Parsley
  • 1/4 Cup Basil
  • 4 tiny Onions
  • 1 Jalapeno Pepper
  • 1 pinch Flaked Sea Salt
  1. Preheat oven to 350 degrees F.  Prepare a small baking pan with a light coating of olive oil.

  2. Wash, peel, and slice potatoes and carrots.  Arrange in baking pan.

  3. Wash and dry herbs, jalapeno, and onions.  Slice the pepper and the onions thinly.   Be careful not to get the juice from the pepper anywhere it shouldn't be.  Wash your hands thoroughly.

  4. Snip up the basil, parsley, and chives.  Spread atop the vegetables in the pan.

  5. Spray the vegetables with a little olive oil spray.  Sprinkle the sea salt over the top.

  6. Cover pan with foil.  Place in preheated oven for about 20 minutes.

  7. Remove from oven.  Remove foil and serve.
