The easiest, peasiest oatmeal cookie recipe ever! And it's actually healthy - great for a breakfast or snack on the go!

Ingredients
  • 1 Ripe banana
  • 1 Cup Quick-cooking dry oatmeal
  • 1/4 Cup chocolate chips vegan
  • 1/4 Cup raisins
Instructions
  1. Preheat oven to 350 degrees F.  Prepare a baking sheet by lining with parchment paper or lightly greasing the pan.
  2. In a bowl, mash the banana with a fork.  Get it good and mushy.
  3. Add the oatmeal and stir to mix.
  4. Stir in the vegan chocolate chips.
  5. Add the raisins and stir thoroughly to combine.
  6. Drop by the teaspoonful onto the prepared pan.
  7. Bake for 10-15 minutes, checking every 5 minutes until done.  Cool for 5-10 minutes before eating.
Recipe Notes

My cookies cooked fast.  Just be sure to watch them closely while they bake.

Quick-cooking oats work better than rolled oats.  I have used both.  If you choose to use rolled oats, they will be more crumbly, making them more of a snack-ish trail mix rather than a cookie.

ALTITUDE Note:  We live at a higher altitude than some, so I have to adjust my oven temperature accordingly.  For some reason, baking is generally more successful if I turn my oven DOWN by about 25 degrees F.  You may have to make adjustments as you see fit.
