A fresh-from-the-garden, easy recipe which uses potatoes and fresh herbs for a flavorful side dish!

Ingredients
4-5Medium Potatoes
2Medium Carrots
1/4CupChives
1/4CupParsley
1/4CupBasil
4tiny Onions
1Jalapeno Pepperoptional
1pinchFlaked Sea Salt
Instructions
Preheat oven to 350 degrees F. Prepare a small baking pan with a light coating of olive oil.
Wash, peel, and slice potatoes and carrots. Arrange in baking pan.
Wash and dry herbs, jalapeno, and onions. Slice the pepper and the onions thinly. Be careful not to get the juice from the pepper anywhere it shouldn't be. Wash your hands thoroughly.
Snip up the basil, parsley, and chives. Spread atop the vegetables in the pan.
Spray the vegetables with a little olive oil spray. Sprinkle the sea salt over the top.
Cover pan with foil. Place in preheated oven for about 20 minutes.
Remove from oven. Remove foil and serve.
Recipe Notes
If you like, add other root vegetables to make this more colorful and fun! Try beets or sunchokes, for example.
